Recipes for Halloween: pumpkin soup

Cream of pumpkin soup
To prepare the cream of pumpkin soup for Halloween, you will need:

First, prepare a "pot of soup." To do this, you need to cut the pumpkin and clean the flesh out of it in the same way as when making a pumpkin lantern. Cut off the pumpkin cover (it will be about one-third the height of the pumpkin). Take out the seeds and gently clean the pulp - it will go to make soup. Temporarily put aside your "soup tureen" aside and start dealing directly with soup.
Pumpkin pulp cut into cubes with a side of 1.5-2 cm. If the pumpkin you took for soup is not large enough, and 500 g of pulp is not typed, you can take the pulp from another pumpkin. Onions peel and finely chop or even rub. Potatoes, too, peel and cut into small cubes, and garlic through garlic crochet.
Put the saucepan on the fire with the vegetable broth. As soon as the soup boils, put pumpkin pulp, potatoes, onions, garlic, chili and salt into it. Bring the broth back to the boil, reduce the heat and simmer for 40 minutes. Close the stewpan lid is not necessary.
While the vegetables stew, prepare a container of soup. Purified pumpkin oil (for this it is convenient to use a cooking brush) and place in oven preheated to 180 degrees. From the boiled pumpkin pulp make mashed potatoes (you can use a blender for this), put it back in the saucepan and cook for 10 minutes, stirring constantly. Then add the pre-warmed cream in the puree and pour the soup into the baked pumpkin. You can sprinkle the finished cream soup with grated cheese or greens. Give cream soup of pumpkin hot, covering the lid.
Soup-puree of pumpkin
Another recipe for Halloween soup – puree of pumpkin. To prepare this soup, take:
- 800 g of pumpkin pulp
- 700 ml of broth (meat or vegetable)
- 200 ml cream
- 150 g of ham
- 1 large onion
- 2 prong garlic
- 2 tbsp vegetable oil
- 40 g butter
- 1 medium potato
- 2 tbsp pumpkin seeds (roasted)
- 1 tsp grated ginger root
- 0.5 tsp. curry powder
- ground black pepper, salt, dill, parsley – to taste
Chop the onion and garlic, and cut the pumpkin pulp into small cubes, as in the previous recipe. Peel potatoes and finely chop. Vegetable oil pour into a pan and melt it creamy. Onion, garlic, curry and ginger put into a saucepan. Eat vegetables with seasonings until they become soft. Garlic should not start burning!
Add the onions and garlic, pumpkin and potatoes, pour the vegetable broth. The broth should cover the vegetables. Boil the soup on small fire. When the pumpkin and potatoes are soft, drain most of the liquid. But do not pour the broth all, and just pour it into a separate bowl – you may need it. Grind the vegetables to puree. Ham cut into thin strips and lightly fry. Add in the mashed potatoes half roasted ham, cream, salt, pepper and dill.
Move the mashed potatoes and put it on the fire again. The soup should be heated, but in no case boil, otherwise the cream will curdle. If the soup is too thick, dilute it with the broth that you drained. After pouring the prepared soup-puree on serving plates, sprinkle it with the remaining ham, parsley and toasted pumpkin seeds.
Of course, these two recipes do not limit the variety of pumpkin dishes. For dessert, for example, you can make a pumpkin casserole.
