Lamb with eggplant

To cook stewed lamb you'll need:

  • lamb — 400 g
  • tomatoes — 3 PCs
  • eggplant — 2 PCs
  • red bell pepper — 1 piece
  • onion — 1 piece
  • olive oil, garlic, coriander — to taste
  • spices: turmeric, paprika, cayenne pepper - to taste

Tomatoes clean the skin, onion and garlic finely chop. Pepper lightly fry on the grill so it will be easier to clean. Clean the pepper from the skin and seeds, cut into strips. Chop the coriander and eggplant cut into large cubes.

Lamb cut into cubes and surveillance sauté in olive oil with Cayenne pepper, paprika and turmeric. Add to the pan the onion and garlic, pour a glass of water and bring to a boil. When the water boils, put the meat in portioned pots and simmer on low heat for 45 minutes.

After this time, add the meat, half of the coriander, the vegetables, a glass of water and a teaspoon of oil. Simmer for half an hour (vegetables should be soft). Sprinkle the finished dish with coriander. You need to eat it while it's hot.
