Recipe honey cake

Recipe for a classic honey cake

- eggs — 3 PCs
- sugar — 600 g
- butter — 250 g
- flour — 600 g
- honey - 5 tbsp. l.
- soda — 1 tsp.
- sour cream (15,20% fat) — 0.5 l
- of condensed milk - 360 ml
Method of preparation:
- Honey cake we will cook in a water bath. Prepare in advance a pot larger and another a smaller volume. A small pot should stay on the big through. Type water and put on the stove to heat up.
- Start to cook the dough. In a small saucepan whisk the eggs and 300 grams of sugar in a thick foam. The sugar should completely melt. Add in foam honey, 50 g of butter and soda (burnt!), place in a water bath. Reduce the flame to medium level and ensure that water does not spill out during boiling. Soon the test will become more and more. Minutes 13-14 start adding the flour in small portions, stirring to eliminate lumps. Next, knead the dough already on the table, adding the remaining flour.
- The dough should have a taut, beautiful brown caramel color. Divide it into equal portions (5-7) and put in the cold for half an hour. Pre-wrap in plastic wrap, so it is not saturated with the smell of foreign foods.
- Start baking cakes. Each piece of dough roll out and the usual lid of the pot peel off the future shape of the cake, but not for trimming. Bake on a sheet covered with parchment paper for about 3 minutes at a temperature of 180 degrees. If the finished cakes bubbles form, then immediately cut them with a knife. As soon as you pull the dough from the oven, peel off the extra pieces around the edges, we will use later.
- Proceed to the preparation of creams for the cake. First whisk the sour cream with the remaining sugar. Use the mixer or blender.
- Whisk the condensed milk with soft butter (200 g).
- Proceed to the final step — the formation of the cake. To the bottom layer of the cake is well soaked, first pour into the dish a little cream and on top put the cake. Pour each cake creams, alternating in any order.
- Crush them scraps from cakes or pollicie in a blender. Thickly sprinkle over the cake top and sides.
