A rare dish of Russian cuisine is so fanned with national coloring, like a halophyte. Of course, over the course of many years the recipe of this dish has acquired multiple variations - for example, broth can be taken with meat, mushroom or fish, but strong sour-sharp taste remains a distinctive feature of this dish.
Classic soup recipe hodgepodge
Like any other dish, the recipe for the most delicious saltwort begins with the selection of ingredients.
- pork ribs – 0.5 kg
- ham-chopped sausage - 250-300 grams
- smoked meat or sausage – 250 grams
- pickled cucumber – 10 pieces (medium size)
- potatoes – 3-4 pieces
- Bay leaf
- lemon – 1 piece
- tomato – 5 tbsp
- black olives pitted – 1 Bank
Method of preparation
The first thing you need to put the ribs to cook. Salt water can almost immediately, but the bay leaf should be added literally for 5-7 minutes until ready, otherwise it will boil and will not give the right flavor.
While the ribs are cooked, cut the potatoes into small cubes and, when the broth starts to boil, throw into a saucepan.
After reaching the readiness to take out the ribs from the broth, finely chop. Also chop the ham and smoked meat.
Finely chop the onion, cucumber and parsley.
Peel the onion, chop finely and fry in a pan until transparent and light Golden blush (in any case not to overcook to brown edges).
Cut cucumbers into rings or cubes, cut the greens and pour it all into a skillet to the onions. Add the same tomato and carefully mix everything. To avoid burning vegetables when they are stewed, add a little water to the frying pan. But just a little - otherwise, instead of stewed vegetables, boiled ones will turn out.
When vegetables are cooked, they should be poured into a saucepan with broth, there also put finely chopped meat ingredients and potatoes. When the contents of the pan boil, you need to add the remaining brine from the cucumber (it is better to choose brine rather salty and even slightly spicy) and whole olives. Cook until done.
On the table, a delicious soup of salt should be served with a slice of lemon.
With regard to vegetable and fish saltwort, their recipes are similar to those described above, but in the case of a fish variant, the place of ribs and smoked meat will be boiled fish, and preferably several varieties. Perfectly suitable for this dish is pike-perch, sterlet, carp, and if you need a presence in the hodgepodge of rich fish taste, then the ideal option will be, for example, mackerel. Although it should be noted that it is better to use still freshwater, but not marine fish.
If we consider this dish as a soup Solyanka with mushrooms, you can use both raw and dried or canned mushrooms. Fits all: from the classic mushrooms and porcini mushrooms to chanterelles, oyster mushrooms or mushrooms.
The only thing is to cook them, except for dried ones, not separately, like meat or fish, and stew along with onions and cucumbers.
There is also some nuance about potatoes. Initially, the traditional soup of herring in the composition does not contain. This happened historically, because potato for Russia is a product imported from outside, although it happened a very long time ago. However, many housewives point out that without potatoes, the hodgepodge is empty and not rich enough, therefore it is the "potato" recipe of a delicious saltwort that is quite common.
