Apple bread (from the book "Recipes "Chinese study"")

This bread is prepared easily and quickly, and with Apple-cinnamon pattern looks very nice. Besides, during baking in the kitchen spreading a divine fragrance!

You'll need

For the filling

  • ½ Cup peeled and diced apples
  • 1 teaspoon fresh lemon juice
  • ¼ Cup applesauce, no sugar
  • 3 tablespoons coconut or other raw sugar

  • 1½ cups whole wheat flour
  • ½ Cup oat flour

  • ¾ Cup milk substitute or soy milk
  • 2-3 tablespoons of honey
  • 1½ teaspoon vanilla extract

How to cook

  1. Preheat oven to 175 °C. Glass baking dish bread size 23×13 cm with paper towels brush with a small amount of vegetable oil and then line a rimmed parchment. Or use a silicone form, its oil is not necessary.
  2. For the filling, mix apples with lemon juice. Add applesauce, sugar, cinnamon, allspice and mix again.
  3. In a bowl mix the dry ingredients for the dough (baking powder and soda, sift).
  4. In another bowl, combine milk, maple syrup, vanilla extract and lemon juice. Connect the wet mixture with dry and stir into a homogeneous mass.
  5. Add to the batter about three-quarters of the Apple filling. With a spoon or knife gently mix. If you get a large "blotches" — nothing. They will give the bread a wonderful flavor.
  6. Put the dough into the pan and then put remaining Apple mixture.
  7. Bake the bread 35-45 minutes, until Golden brown. Readiness check bread with a toothpick or skewer — stick it in the middle of the loaf and immediately remove the: it should be dry. Remove the bread from the oven, allow to cool in the form. Then lay out the bread and cut it into slices.

Banana bread

You'll need

  • 2¼ cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 4 ripe banana
  • 340 g thick Apple puree without sugar
  • Substitute for 2 eggs (2 tablespoons Flaxseed meal 6 tablespoons water)

How to cook

  1. Preheat oven to 175 °C.
  2. Mix dry ingredients.
  3. Bananas make puree and mix it with applesauce, egg substitute and water.
  4. With a whisk mix wet mixture with dry.
  5. Pour the batter into a nonstick baking dish. Bake for 1 hour.

An egg substitute is a product that does not contain protein, milk, gluten and eggs. On sale it comes from different manufacturers, one of which is EnerG Foods.

"There are many vegetable substitutes for eggs. For most recipes, the simplest and most accessible of them is enough: instead of one egg, you can use a tablespoon of ground flaxseed mixed with three tablespoons of water; a tablespoon of chia seeds; puree from half a banana; from a quarter to a glass of silk tofu; a quarter of a glass of apple puree. You can use an egg replacer, prepared according to the recipe indicated on the package. "

Bread made from quinoa and corn

You'll need

  • 1 Cup water
  • ½ Cup quinoa
  • 1 Cup of corn flour
  • ½ Cup whole wheat flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • ½ Teaspoon sea salt
  • ½ Cup corn kernels (about 1 cob)
  • ½ Ripe banana
  • ¾ Cup soy milk
  • ¼ Cup maple syrup or agave nectar
  • Substitute for one egg (1 tablespoon Flaxseed meal whisked with 3 tablespoons water)

How to cook

  1. Boil water, add quinoa, reduce fire. Cover the pan and simmer quinoa for 15-20 minutes until the water has evaporated and barley is not swell. Remove from heat.
  2. In a bowl mix corn and wheat flour, baking powder, baking soda and salt. Add corn, stir.
  3. In another bowl, mash the banana into a puree, add milk, maple syrup or agave nectar, and egg replacer.
  4. Connect the wet mix with the dry.
  5. Carefully add quinoa, stir. The mixture should be quite thick.
  6. Pour the mixture into a nonstick shape with a size of 20×20 cm, and bake the bread for 25-30 minutes at 175 °C. Let it cool for 10 minutes and then cut into slices.
