A nutritious and healthy dish is the best choice for lunch or early dinner. Tender poultry meat with exquisite almond crust can be cooked in a matter of minutes. Spicy notes of mustard and honey combined with juicy greens will add a new flavor to the traditional meal.

Ingredients (for 4 servings):

  • two chicken Breasts, cut lengthways
  • 120 – 160 g almond flour
  • 1 – 2 tbsp olive oil
  • salt, pepper, seasonings to taste

For the sauce:

  • 1 Cup chicken broth
  • 50 - 60 g Dijon mustard
  • 3 – 4 tbsp maple syrup or honey
  • 1 tbsp rice vinegar
  • ½ Tsp chopped onion
  • ½ Tbsp finely chopped fresh rosemary
  • 1 tbsp corn starch dissolved in 2 tbsp water

Method of preparation:

  1. Combine the sauce in the frying pan - chicken broth, mustard, honey, vinegar and onion, add salt and pepper. Bring to a boil over a small fire
  2. When the mixture starts to boil – enter the starch solution, and, stirring, cook until thick. Add to the sauce fresh rosemary and remove from heat
  3. Chicken breast grate inside and on all sides with salt, pepper and seasonings, carefully roll in almond flour
  4. Heat the olive oil in a frying pan and fry the breaded fillets on medium heat for 10 minutes each side – until Golden brown. Lay the breast on a serving dish and pour the mustard-honey sauce
  5. Serve hot with greens or salad
